The cellar's entrance and it's testing area
2- Oak Barrels of 228 litres (called "Pièces") in which the red wine is aged for 18 months. These
barrels are renewed year after year in order to keep the same proportion of new barrels
3- These
rotatives tanks are used for the alcoholic fermentation. They help
extracting the maximum out of the grapes. The must regularly receives
air through micro-oxygenation. These stainless rotative tanks have replaced
old wooden barrels cuves where the cap was punched during the fermentation. Such
tanks are visible at the Castle of Clos de Vougeot, and old abbey only a few miles away.
4- Oval shaped
barrels brought over by Lucien Audidier, from a north-east french
wine making region, Alsace. very rare in Burgundy.
